A substitute coffee is prepared from malt. Thus, beer barley is soaked into 12-14≦̸C of water for 70 hrs, germinates for 9 days at 14- 16≦̸C, dried, removed of sprout, roasted at 200≦̸C, and powdered in high speed crusher (4800 rpm; 120 mesh). The powder is dissolved in water to give 30% solution, heated at 55≦̸C, stirred for 60 min, boiled at 100≦̸C for 10 min, and filtered by centrifugal clarifier to remove insoluble materials. The resulting solution is mixed with beer barley to get 5% content, homogenized at 160 kg/cm2, pasteurized at 130≦̸C for 2 sec, condensed to give 54% of solid content, and spray-dried by 200≦̸C air to give final product.
