PURPOSE:To efficiently obtain L-serine by reaction between Gly and formaldehyde using crude enzyme prepared by putting a culture solution of serine hydroxymethyl transferase-producing bacteria to a specific treatment. CONSTITUTION:Firstly, bacteria having serine hydroxymethyl transferase- producing potential is put to culture. Second, a culture solution of said bacteria, mycelia or mycelia-treated product is heat-treated in the presence of glycine to obtain a crude enzyme. Thence, an enzymatic reaction is carried out between the glycine and formaldehyde using said crude enzyme as an enzymatic source. Said bacteria is pref. Escherichia coli produced by introducing the GlyA gene governing service hydroxymethyl transferase into mycelia using a recombinant technique. |
