Method for the removal and transfer of waste from serving trays 9, which are conveyed on a conveyor belt 2 past various stations for the removal of dirty plates, the removal of waste and washing of the trays. A vacuum is created in a suction nozzle 10 in immediate proximity to the line, along which the trays 9 are conveyed, and the waste is transferred by way of a transfer line 6, which is connected to the nozzle and through which the vacuum is produced at the nozzle.
