PURPOSE:To decrease the syneresis of a bean curd in heating under pressure, by adding a coagulant to a soya milk cooled under specific condition, filling and sealing the milk in a container and heating under pressure. CONSTITUTION:Soya milk maintained at <=5 deg.C for >=10hr is added with a coagulant (e.g., glucono-delta-lactone), filled and sealed in a container, heated under pressure at 110-140 deg.C for 20-90min and immediately cooled with water. |
