PURPOSE:To improve operability and cook rice useful for cooked rice charged in a large amount with homogeneous flavor, texture, gloss and sticking state of the cooked rice without dispersion, by washing rice and adding a specific oil-in-water type emulsion to the rice in cooking. CONSTITUTION:Rice is washed and an oil-in water type emulsion consisting of 5-70wt.% edible fats and oils in an amount of 0.1-20wt.% based on the rice is added to the rice. The resultant rice is then cooked. |
