<p>PURPOSE:To prepare liquors such as wine or brandy having the flavor of apple, peach, etc., by brewing the liquor with a yeast belonging to genus Trichosporon and capable of producing ethanol. CONSTITUTION:The objective liquors can be prepared by brewing with a yeast belonging to genus Trichosporon and capable of producing ethanol [preferably Trichosporon eriense S105-4 (FERM BP-1437)]. The brewed liquor is preferably distilled in the presence of 10<5>-10<10> yeast cells per 1ml.</p> |
