PURPOSE:To prepare the subject mellow beverage having rich acid taste, by contacting a sugar-containing liquid with a yeast, separating the obtained alcohol-containing liquid into a concentrate and a dialyzate with a reverse osmosis membrane, recovering the concentrated liquid and returning the dialyzate to the above sugar-containing liquid. CONSTITUTION:A mixture of starch, rice and water is made to contact with malt, liquefying enzyme and/or saccharifying enzyme to obtain a sugar- containing liquid. The sugar-containing liquid is brought into contact with a yeast by batch process, etc., to obtain an alcohol-containing liquid, which is concentrated with a reverse osmosis membrane made of polyamide, polyester, etc., and separated into a concentrated liquid having an alcohol content of 12-25% and a dialyzate having low alcohol concentration. The concentrated liquid is recovered as it is and the dialyzate is returned to the above sugar- containing liquid and reused to obtain the objective beverage. |
