NEW MATERIAL:An exoxylanase II having the following characteristics. Action; reacting with xylan to provide sylose and small amount of xylobiose. Substrate specificity; decomposing xylan. Optimal pH; nearly 6.5. Stable pH; 5-8. Reaction temperature range; 40-80 deg.C. Optimal reaction temperature; nearly 70 deg.C. Molecular weight; about 10000. Isoelectric point; nearly 4.0. USE:Useful in production of xylose and xylobiose effective to food industry, cosmetic industry, etc., as a sweetener, humectant, etc. PREPARATION:A bacterium strain belonging to the genus Bacillus such as Bacillus stearothermophilus No.21 is cultured in a culture medium, preferably at 55-60 deg.C and nearly pH7.0 for 1-3 day. |
