In one embodiment, Figs. 5A and 5B, each plate 5 is provided with a meandering conduit 6 or a plurality of conduits for the flow therethrough of steam or hot water to heat the centre portion of the plate uniformly. The side portions of plate are cooled by cool water flowing through conduits 7a, 7b. Recesses 8a, 8b assist the cooling of the side portions. In modifications, a pair of cooling conduits (7) is provided in each side portion, Fig. 8A (not shown), or lateral grooves 9 are provided instead of the conduits 7, Fig. 8C, which grooves may, optionally, be filled with an adiabatic substance (10), Fig. 8D (not shown).
