Fructose was obtained from inulin using immobilized enzyme. Thus, 100g-150g of saccharide in 1 liter of girasole ext. was hydrolyzed by chitin-immobilized inulase in a 1L-Reactor at pH 4.5 and 40-60≦̸C to give fructose at the conversion ratio of 84%.
