A pressure-controlling process for heat-sterilizing the food packages in a case or bag within a sterilization treatment vessel under pressure is comprised of changing the rate of pressure increasing in the vessel near the changing point of pressure increasing in the pressure pattern of the package and delaying the time point of the pressure-dropping in the vessel after starting of the cool-treatment thereof.
