<p>PURPOSE:To obtain a SHOCHU (low-class distilled spirits) having mellow fragrance by using a white malt prepared by inoculating seed melt and performing the malting operation for a specific period under controlled condition. CONSTITUTION:A white malt having acidic protease activity and glucoamylase activity is prepared by subjecting cereals such as nonglutinous rice or barley to immersion, draining, cooking and spontaneous cooling, inoculating the product with a seed malt such as Aspergillus awamori and fermenting at 35-42 deg.C for 20-32hr. The objective SHOCHU is produced by using the obtained malt.</p> |
