<p>A method of freezing foods which comprises the step of cooling a heat transfer device having an open top, and the step of bringing articles to be frozen in contact with one surface of the heat transfer device through a layer of brine and keeping the articles in such contact relation. Freezing of the articles progresses only from their respective portions at which they are in contact with the brine.</p> |
