PURPOSE:To obtain crumb-like food which is used as a coat for fry, because of its low hygroscopicity, by adding sorbose to a starting mixture containing more then one selected from cereal flour, potato mash and starch flour, and further soybean flour, and roasting the mixture in a usual manner. CONSTITUTION:Sorbose is added to the above-state flour mixture in an amount of 0.1-10wt.% preferably 0.2-5wt.% on dry basic and roasted in a usual manner, as bread is baked, to give the subject crumb-like food. The cereal flour is, for example, flour of wheat, barley or corn, while starch flour is obtained from these starch-rich crops. As the food has low hygroscopicity, the softening of the dry coating can be delayed by absorption of moisture in air. |
