PURPOSE:To prepare a roasted wheat gluten having high expansion ratio and free from scorching, in a short time at a low cost, by heating a wheat gluten dough with high-frequency radiation generated from a high-frequency oscillator and with heat emitted from a hot-wire heater and then heating with said hot- wire heater. CONSTITUTION:A high-frequency heating apparatus containing a high-frequency oscillator and a hot-wire heater is used in the present process. In the 1st step, the space in the heating apparatus is maintained at a proper high temperature with the hot-wire heater. A wheat gluten dough is placed in the high-temperature environment and immediately heated by energizing the high-frequency oscillator. As a result, the wheat gluten dough placed in the high-temperature environment is immediately expanded by the high temperature in the heating apparatus and the heat generated in the inner part of the dough by the high-frequency radiation. In the 2nd step, the expanded wheat gluten dough is externally heated with said hot-wire heater to bake the wheat gluten dough. The obtained wheat gluten has pure white color and is free from scorch mark. |
