<p>The apparatus is for the introduction of measured quantities of materials such as SO2, syrups, colourants, etc. into liquid foodstuffs carrying solid particles in suspension, e.g. grape musts, in spite of variations in the liquid feed. It consists of two horizontal, parallel cylinders with automatically controlled valves at each end. Each cylinder is alternately filled and emptied by operation of the valves and a quantity of SO2 solution is injected by gravity into the must flowing from the cylinder being emptied. The correct amount of solution is injected for each volume of must to avoid any risk of oxidation or of too rapid a fermentation.</p> |
