<p>Product consists of a shallow downwards-tapering container, pref. of metal foil into which is placed successively (i) a layer of fruit, (ii) hot jelly mass, pref based on starch or agar, (iii) a thin sheet of non-hydroscopic or only slightly hygroscopic (but edible) material either farinaceous or protinaceous, (iv) (optionally) a thin layer of jam, and (v) the inverted tart case. The assembly is then closed and sterilised. To serve, the container is opened, inverted and removed.</p> |
