PURPOSE:To provide the title production process so designed that an aqueous phase containing viable bacteria and an oil-and-fat spiked with a lipophilic emulsifying agent are mutually blended to produce a W/O type emulsion containing the viable bacteria, which is then encapsulated by a specified technique, thereby ensuring said bacteria to stably survive in acidic beverages without the need for using any specific stabilizer, etc. CONSTITUTION:Firstly, an aqueous phase containing viable bacteria and an oil-and-fat spiked with a lipophilic emulsifying agent are mutually blended to form a W/O-type emulsion containing the viable bacteria. Thence, the resultant emulsion is homogeneously dispersed in a polyvalent metal salt solution, and the resulting dispersion is brought into contact with a film-forming solution to carry out reaction to produce a gel-like film. Said viable bacteria is e.g., Lactobacillus bifidus, various Lactobacilli, microorganisms for general industrial use. The lipophilic emulsifying agent is e.g., a polyglycerin fatty acid ester, and said polyvalent metal salt solution is pref. a 3-5% solution of e.g., calcium lactate, calcium chloride. For said film-forming solution, a solution of sodium alginate, LM pectin, or glucomannan may be used. |
