PURPOSE:To obtain hamburger steak patties with excellent operability at a low cost, by mixing finely minced cattle meat with onion, bread crumb, hen's eggs, etc., extrusion molding the resultant mixture into a cylindrical hamburger steak mixture, subjecting the mixture to pretreatment, such as steaming treatment, cutting the pretreated mixture into a patty form of the product shape and subjecting the cut patties to post-treatment, such as freezing. CONSTITUTION:Onion, bread crumb, hen's egg, etc., are added to finely minced cattle meat and sufficiently kneaded to produce a sticky kneaded material, which is then extrusion molded into a cylindrical hamburger steak mixture 1. The resultant cylindrical hamburger steak mixture 1 is then introduced into a steamer, subjected to steaming treatment (C) and then introduced into a cooler to carry out cooling treatment (D). The cooled mixture is subsequently transferred to a cutter and subjected to cutting treatment (E) to provide pieces 2 of the hamburger steak mixture in a patty form of the product shape. The obtained pieces 2 of the hamburger steak mixture in the patty form in a constant amount are transferred onto a paperboard 3 and, together with the paperboard, introduced into a spiral type continuous freezer and objected to freezing treatment (F) to afford the aimed frozen hamburger steak patties. |
