PURPOSE:To obtain instant steamed glutinous rice having excellent restoring force and good texture, by immersing glutinous rice in water, steaming the immersed rice under pressure, drying, grinding, further drying, then heating and expanding the dried rice with superheated steam under concentration and drying. CONSTITUTION:Polished glutinous rice is immersed in water and then steamed. The steamed rice is primarily dried to 20-30% water content, ground and then secondarily dried to 10-20% water content. Then the glutinous rice is heated and expanded with superheated steam under pressure, thirdly dried to <=8% water content to give the aimed instant steamed glutinous rice. When used for food, the instant steamed glutinous rice is blended with a proper amount of water or optionally with freeze-dried vegetables, beans or fishes and shellfishes and treated by an electric oven for 3-5min. |
