摘要 PURPOSE:To prepare novel and unique TSUKUDANI (seafood and vegetables boiled in sweetened soy sauce) covered with a large amount of covering material, by using sorbose as sugars to be used in a seasoning liquid. CONSTITUTION:Sorbose is used as a part or total (preferably about >=20%) of sugars to be used as a component of a seasoning for the preparation of TSUKUDANI.
