PURPOSE:To produce MENS (noodles) having high nutritive value, especially CHUUKA MEN (Chinese noodle) requiring no additive such as salt water and specific mix flour having high nutritive value, by using miscellaneous beans such a KIMAME, black-eyed pea and pea as raw materials. CONSTITUTION:Miscellaneous beans such as KIMAME, black-eyed pea and pea are each pulverized and one or two or more kind of the resultant fine powders are blended at arbitrary ratio to give a fine powder of miscellaneous beans. Then the fine powder is blended with wheat flour used as a binder and the blend is formed into the MEN (noodle) according to a conventional method. Further, 20-80wt.% fine powder is blended with 80-20wt.% wheat flour to provide the specific mix flour. |
