PURPOSE:To obtain a flavor oil which has a marrow taste originating from rice bran oil by dipping rice bran in oil and fat, treating them with heat, then removing the solid part. CONSTITUTION:Rice bran is dipped in fat and oil, they are heat-treated at 140-180 deg.C under vacuum of 60mmHg, then the solid parts are separated. The fat and oil to be flavored is, e.g., rape oil, soybean oil, sun flower oil, cotton seed oil, ground nut oil, corn oil, safflower oil, kapok oil, palm oil, coconut oil, and so on except rice bran oil. The amount of the rice bran is more than 3wt.% based on the fat and oil. When the flavor is intensified, it is increased more than 5wt.%. |
