PURPOSE:To obtain the title kelp roll free from peculiar sour, fish odor etc. even with red fish, having favorable flavor and smell, by rolling a specified size of fish or pieces of fish boiled or steamed and dried by roasting in a kelp reconditioned with water. CONSTITUTION:When a kelp roll is to produced by rolling a specified size of fish or pieces of fish (e.g., bonito) in a kelp reconditioned with water, boiled, steamed or boiled with seasoning, such fish or pieces of fish as to have been boiled or steamed and dried while roasting once - four times are used, thus obtaining the objective kelp roll with synergistic good taste, a combination of good taste of the fish with that of the kelp. |
