PURPOSE:To obtain a carbohydrate having low cariogenesity and excellent sweetness quality and utilizable as a sweetener, a body-forming agent and various other uses, by compounding isomaltose and isomaltulose at a specific ratio. CONSTITUTION:Isomaltose and isomaltulose are mixed with each other at a ratio of 1:3-5:1. If necessary, the obtained carbohydrate mixture is further added with other carbohydrate in an amount of <=20% based on the sum of isomaltose and isomaltulose. |
