[Also in Division C2] A mixture of di- and trisulfides containing compounds of the formula: wherein R is an alkyl of alkylene group having 1 to 5 carbon atoms and R1 is hydrogen or an alkyl group having 1 to 3 carbon atoms obtained by heating thiosulphinates having the formula: or are used in foodstuffs to impart alliaceous flavour. The sulfide mixture may be added to the foodstuff after formation of such mixtures from the thiosulphinates or the thiosulphinates may be added to the foodstuff prior to heating to produce the mixture.
