Zur Gewinnung von Saftbrei aus Früchten, Beeren und/oder Gemüsen wird das Rohmaterial, das aus ganzen Früchten bestehen kann, zuerst in einer Zerkleinerungseinrichtung (1) zerkleinert und anschliessend mit Hilfe einer Presse (2) ausgepresst. Die Presse (2) ist so Konstruiert, daß zusammen mit dem vom Rohmaterial getrennten Saft ein hoher Bestandteil an wertvollem Zellmaterial abgepreßt wird. Dadurch entsteht ein viskoser Saftbrei, der anschließend zu Veredelungszwecken, beispielsweise zur Herstellung von Klarsaft, in einer sich an die Presse (2) anschliessenden Querstromfiltrationseinrichtung (7) weiterverarbeitet wird. Durch das erfindungsgemässe Verfahren werden die Qualität der Veredelungsprodukte sowie die Wirtschaftlichkeit der Anlage und die Ausbeute, insbesondere in Verbindung mit einer der Presse (2) zugeordneten Recyclingpresse (4) erheblich verbessert. Abstract In order to produce a juicy pulp from fruit, berries and/or vegetables, the raw material, that can be composed of the whole fruit, is first comminuted in a comminution device (1), then pressed out with a press (2). The press (2) presses out together with the juice extracted from the raw material a high content of precious cellulosic material. A visquous juicy paste is thus obtained that is further processed for upgrading purposes, for example for producing a clear juice, by a cross-flow filtration device (7) linked to the press (2). This process considerably improves the quality of the upgraded products, the economic viability of the installation and the yield, specially when implemented in connection with a recycling press (4) associated with the press (2). |
