A baking oven with a cooker part (2, 3), a heat accumulator (4) and a heating-medium duct (5) is produced, which with a forward run section (6) connects the accumulator (4) to the cooker part (2, 3) and in a return run section connects the cooker part (2, 3) to the accumulator (4), and in which forward run section (6) and return run section (7) are connected via a bypass (10). The cross-section of the bypass and/or of the heating-medium duct is adjustable so that the temperature of the heating medium supplied to the cooker part (2, 3) can be regulated according to the requirements of the product to be baked. <IMAGE>
