发明名称 PREPARATION OF GREEN-COLORED WHEAT NOODLE
摘要 PURPOSE:To prepare green-colored wheat noodles having the characteristic taste and flavor of wheat noodles, by kneading wheat flour with decocted liquid containing extracted component of cape jasmine fruit, aging the obtained noodle dough, thinly extending the dough and slitting into thin strips. CONSTITUTION:A decocted liquid containing the decocted and extracted component of cape jasmine fruit is prepared beforehand. Wheat flour is kneaded with the prepared liquid to form yellow or orange-colored noodle dough. The noodle dough is discolored into yellowish green or green color by aging, extended to thin sheet and slit into thin strips to obtain the objective noodles. The decocted liquid is preferably incorporated with extract of Chinese herb drug such as Panax ginseng.
