Boiling fowl chicken are packed in individual transparent heat-resistant polyamide foil, esp. 0.1 mm thick foil consisting of 40 mu polyamide lined with 60 mu polypropylene foil, sealed, partic. after creating a fine vacuum within bag, and cooked for 1 hr. at 120 degrees C esp. in an autoclave partly filled with water, while pref. turning chicken. For autoclave working, packed bags may be placed in a basket which is turned 6x during cooking. |
