PURPOSE:To obtain the present urease capable of completely decomposing urea which causes the deterioration of liquors or unrefined liquors, by culturing a specific microbial strain capable of producing urease and separating the produced urease. CONSTITUTION:The objective urease can be produced by culturing a urease- producing microbial strain belonging to genus Pseudomonas and having optimum reaction pH in acidic region (e.g., FERM P-9793) and collecting the urease produced in the microbial cell and/or in the culture liquid. The culture is preferably carried out in a medium having a pH of 5.5-7.8 at about 30 deg.C for 5-72hr. |
