PURPOSE:To obtain a tasty processed food of edible mushrooms capable of enhancing taste and flavor unique to the edible mushrooms, exhibiting high aromaticity and simultaneously synergistically adding palatability and digestibility due to roasting, by roasting the edible mushrooms under specific conditions. CONSTITUTION:The aimed processed food of edible mushrooms obtained by adding water in an amount of about 5-20 times, preferably 10 times based on SHIITAKE mushrooms, pulverizing the SHIITAKE mushrooms to prepare a slurry, treating the resultant slurry in a double drum dryer heated at 120-400 deg.C, preferably 140-200 deg.C, roasting the SHIITAKE mushrooms, mixing 1 pt.wt. above-mentioned edible mushrooms (dried materials) with 2-40 pts.wt. edible raw material (e.g., soluble starch) and roasting the mixture at 120-400 deg.C. The obtained food is used as a powdery soup, seasoning, etc. |
