PURPOSE:To obtain the title seasoning, used also as a beverage and equal to regular 'MIRIN' (sweet Japanese rice wine), by continuously passing an alcohol liquid through an unrefined 'MIRIN'. CONSTITUTION:The aimed seasoning obtained by continuously passing an alcohol liquid through an unrefined 'MIRIN'. Furthermore, 0.01-0.1% (wt./vol.) enzyme (preferably amylase and protease used in combination) is preferably added to the alcohol liquid. Saccahrides may also be added thereto. |
