PURPOSE:To form a paste of bean cake efficiently and inexpensively by combining bean cake, especially TOFU refuse with an acid, boiling them under pressure neutralizing and crushing physically into fine particles. CONSTITUTION:Bean cake produced in the course of bean processing is combined with an acid, boiled under pressure, then neutralized and crushed physically into fine particles to form a paste. In this process, an enzyme may be allowed to act on the product additionally, after acid addition, boiling and cooling, then, crushing can follow. In this case, perfect sterilization has been effected by boiling, moreover, pectins are partially hydrolyzed, therefore the amount of the enzyme added can be reduced and the time also is greatly shortened. |
