Baking oven - with heating elements mounted in hinged doors

The baking sheets carrying the dough portions are mounted regularly spaced in a trolley frame running in rails on the oven floor. At the top rear of the oven is at least one fan whose suction manifold runs down the inside of the back wall and which delivers air via a top duct to a slot aligned with a slot at the top of the hinged door when the oven is closed. This slot feeds into a hollow cavity within the door, tapering from the top downwards within which the heater elements are arranged as a parallel bar grating, the elements being equal in number to the trays in the frame and each having an outlet slit in the lining plate of the door aligned with the gap between a pair of trays and with a corresponding slit in the rear wall of the oven leading into the fan suction manifold. It is a relatively cheap and easily maintained system producing uniformly baked goods.
