Prepn. of cheese sealed in plastic film comprises (a) curdling and salting in conventional manner, (b) drying for a shorter time and pref. higher temp. than normal pref. 2-15 days at 12-25 deg.C and RH 50-70%., (c) coating the cheese with wax, or polymer emulsion, (d) enclosing and hermetically sealing the cheese in a plastic film, (e) storing under warm conditions followed by conventional ripening. |
