PURPOSE:To provide the title potage soup, developing no coagula of lactoprotein in sterilizing soup raw material, good in eating feel along with appearance, containing, as crude protein, lactoprtotein at or above specified proportion and solid ingredients. CONSTITUTION:A potage soup raw material comprised of >=0.8wt.% of lactoprotein and solid ingredients is spiked with pref. a pH adjustor (e.g., sodium citrate) to adjust the pH of said raw material to 6.4-6.7 followed by heating at 125-135 deg.C for several seconds to several minutes to carry out sterilization, thus obtaining the objective potage soup with stabilized lactoptotein in the above sterilization in which coagula are hard-to-develop. |
