PURPOSE:To obtain noodles capable of readily ingesting carotene (vitamin A), by skinning sweet potatoes (species BENIHAYATO), cutting the sweet potatoes into thin round slices, drying the slices, grinding the dried slices into fine powder and blending the resultant fine powder with raw materials for preparing the poodles. CONSTITUTION:Sweet potatoes (species BENIHAYATO) containing much carotene in an amount equal to or larger than that of carrot are washed, skinned, cut into thin round slices and dried to provide powder of the sweet potatoes. The resultant powder in an adequate amount is blended in a conventional process for preparing noodles to afford the aimed noodles. |
