PURPOSE:To prepare a packed bean sprout soup free from stickiness of the sprout part, leaving the natural taste and flavor of bean sprout, by heating ungrown bean sprout with microwave radiation in a state immersed in water. CONSTITUTION:Ungrown bean sprout having a sprout length of about 4-6cm is produced by sprouting soybean or other bean. The bean sprout is put into a microwave-transmitting vessel made of e.g. synthetic resin or ceramic. 6-8pts. wt. (based on 1pt.wt. of the bean sprout) of water is poured into the vessel and the content is heated by microwave heating. |
