Part of the water vapour contained in a gas and vapour mixture is made to condense, during one stage, in a condenser 2. Vapour is extracted from the gas and vapour mixture downstream 10 of the condenser 2 and at least part of this extracted vapour is reinjected into the gas and vapour mixture upstream 9 of the condenser 2 in order to increase the vapour concentration in the mixture, increase the dewpoint and promote condensation. Preferably, this vapour transfer from downstream to upstream of the condenser is carried out by means of a solid adsorbent substance.
