PURPOSE:To economically obtain soy sauce of sufficiently good tests in high recovery at high filtration rate, by faltering soy sauce heated to moderate temperatures through a specific porous plate plate-like membrane. CONSTITUTION:Raw soy sauce heated to 40-80 deg.C is brought into contact with a porous flat plate-like membrane (e.g. polytetrafluorethylene membrane) with an average hole diameter of 0.1-0.6mum and thickness of 50-200mu the perform filtration under an average pressure of 0.5-4kgf/cm<2> at lineal rate of 0.5-2m/sec. |
