PURPOSE: To obtain such a high-protein low-calorie protein product which has particle size distribution in a dry state in a specified range, most of the particles are modified protein which is spherical and does not substantially agglomerates, and the particles form a smooth emulsion-like macrocolloid at the time of hydration. CONSTITUTION: This protein product has about 0.1 to 0.2μm average particle size in a dry state and has particles of >3μm particle size by about <2% of the whole particles. The particles consist of substantially non-agglomerated particles of modified protein. The particles are generally spherical when observed by a microscope with standard illumination at about 800 magnification. When the protein product is hydrated, a macrocolloid having smooth emulsion- like sensory characteristics is produced.
