PURPOSE:To simply obtain a chemically modified lipase reduced in lowering of a catalyst activity in an organic solvent, by modifying an amino group in lipase with a specific alkenylcinnamic anhydride or alkylketene dimer. CONSTITUTION:An amino group in lipase is modified with an alkenylcinnamic anhydride expressed by formula I (R1 and R2 are 10-20C alkyl or alkenyl group) or alkylketene dimer expressed by formula II (R3 and R4 are 10-20C alkyl or alkenyl group). Hydrolysis of oils and fats or fatty acid esters can be efficiently carried out in an organic solvent or two phase system of water- organic solvent by using the above-mentioned method. |
