The device is an addn. to a conventional olive pitting machine which has a rotating drum with multiple holders and pitting units for the olives. A cutting unit is added, beyond the pitting zone, with multiple knives situated in a transverse plane to the drum, distributed at equal angles and equal in number to the holders. Each of the holders, with corresponding pitting tool, has a coaxial outlet to the cutting zone, through which the pitted olive is expelled, to be sliced by the knives. The slicing unit, into which the outlet feeds the olive, has a slotted prolongation like a cradle, which with the seating disc for the olive, forms a tubular housing in which the olive is retained perfectly during the cutting phase.
