Flakes consisting of fragments of a film obtained by drying, on a cylinder, a puree of yam tubers, plantains and/or cooked manioc roots. The film has a weight of 1.0 - 1.7 g/dm<2>. The majority of the flakes have sizes of between 0.3 and 3 mm. Their bulk density is from 350 - 550 g/l. They may be reconstituted by being mixed with lukewarm water, in a ratio of one volume of flakes to one volume of water. A simple kneading of this pasty mixture with the palm of the hand makes it possible to give it the smooth appearance and the elastic texture of traditional foofoo. |
