摘要 PURPOSE: To obtain a flour having excellent bread making property and no nasty odors by adding a specified amt. of wheat lipoxigenase to a flour. CONSTITUTION: Wheat lipoxigenase, preferably wheat lipoxigenase isozyme L-3 is added by 50 to 500 units, preferably 100 to 300 units per 1g of wheat.
