PURPOSE: To produce a whey protein concentrate having a highα-lactoalbumin content by subjecting a whey protein-contg. liquid to a specific ultrafiltration treatment. CONSTITUTION: The whey protein-contg. liquid contg. theα-lactoalbumin andβ-lactoglobulin, for example, the whey protein concentrate diluted with whey or deionized water is subjected to ultrafiltration by using a membrane substantially having a cut-off mol.wt. of 100,000 and more preferably, the obtd. permeated matter is further subjected to the ultrafiltration by using the membrane substantially having the mol.wt. cut off of <=10,000.
