PURPOSE:To efficiently obtain the subject mixture containing a fixed quantity of leucine, effective for improving functions of muscular motion, especially of sports, etc., treating a protein raw material with a specific enzyme and concentrating the treated matter, by using a hydrophobic reverse osmosis membrane. CONSTITUTION:An aqueous solution of protein (preferably milk casein) is treated with an enzyme to specifically hydrolyze leucine residue at the N-end of peptide and the treated matter is concentrated by using a hydrophobic reverse osmosis membrane by >= twice to give the aimed mixture having >=20% leucine content from the permeated solution at the permeation side. The aqueous solution of protein is preferably reacted at pH6-7 at the ratio of the enzyme/substrate of 1/40-1/60 at 35-45 deg.C for 2-3 hours. |
