The method consists in: - sampling 1 and digitising 2 a PAL or SECAM composite video signal; - determining via a first processing path 3, 4 a luminance signal and a chrominance signal from the digital sample of the current point of the image, from an earlier sample homologous to the current point situated on the line in the preceding frame which is positioned spatially in the image immediately below the current line, and from digital samples corresponding to the points neighbouring these two points on these two lines; - determining via a second processing path 5, 6 a luminance signal and a chrominance signal by applying the digital composite signal to the input of a luminance filter and of a chrominance filter respectively; - choosing 7 the luminance and chrominance signals which are present at the output of the first processing path or of the second processing path as a function of an analysis 9 of the local spatial-temporal context of the point carried out on the basis of the values, for a neighbourhood of the current point, of the chrominance signal determined by the first processing path.
