PURPOSE:To obtain a safe food, etc., capable of softening by saliva and finally gelling without being readily bitten off, by blending foods, etc., with a mixture of a specific aqueous KONJAK derivative with dietary fibers, drying the blend and forming the dried blend into a required shape. CONSTITUTION:A mixture of an aqueous KONJAK derivative (containing 1-3% KONJAK solid) capable of providing an aqueous gelatinous material or core gel after freezing or drying with dietary fibers (used as a dried substance), such as crystalline cellulose, is blended with foods, such as flavor of fishes or shellfishes, etc., medicines including herb medicines, dried by a through-flow method with hot air at 80 deg.C or with air at 45 deg.C (with <=15% residual moisture in principle) and formed into a required shape to afford the aimed food, etc. Furthermore, the kinds of the aqueous KOMJAK derivative and dietary fibers and amount of the dietary fibers are preferably determined by small experiments according to the purpose of use. |
